This is the madras paste we use in our own curries. We make it from a blend of spices, tomato, tamarind and lemon which create a deliciously rich, spicy and tangy flavour for madras curries.

Ingredients: Tomato Paste, Water, Plum Tomato, Vegetable Oil, Lemon Juice, Chilli Powder, Tamarind, Chillies, Garlic, Ginger, Vinegar, Kashmiri Chilli Powder, Mixed Spices, Salt

Unopened Pouch

Store in a cool, dark, and dry cupboard away from sunlight. The pouch will last until the best before date, usually 6 to 12 months.

Unopened pouches can also be frozen for up to 12 months.

Do not use if the pouch is bloated or leaking.

After Opening

Refrigerate and consume within 3 days.

Unused paste can also be frozen for up to 3 months, portion the paste into smaller amounts for convenience before freezing.

I made a very large chicken madras using this paste as the base, and it turned out really well. It might be a touch hot for some, but, to me, this is what a madras should taste like.

The paste is the right balance of hot and sour. I don’t like curries that are too sweet and this paste is good. Tend to use slightly more than recommended but really good!
